Super Simple Sweet Potato Guacajacks!
This tasty little idea is inspired by the awesome guys BOSH! who have been using social media to fly the vegan flag like no other in recent years. Their recipes are the gold standard in taste, convenience and that feeling of “eh why the f**k didn’t I think of this?!” head scratching brilliance – you should defo check em out!
To make these tasty guacamole filled baked sweet potatoes I basically followed their simple plan, with a few adjustments aka things to replace things I didn’t have to hand right that minute…
Get the potatoes going –
Pierce a few sweet potatoes, lightly drizzle some oil, sprinkle some salt & pop them in the oven for 40-50 minutes
While they’re cookin, get the guac going –
Mash about two avocados in a large bowl & add the following
Juice of one lime
Handful of chopped up cherry tomatoes
1/2 teaspoon minced garlic
Some chilli flakes
1 tin of black beans (rinsed)
Some salt n peppa
When sweet potato is soft through, remove from oven, slice open, add the black bean & avocado yummyness, maybe seasons some more, and you’re ready to go!
Sweet potatoes & guacamole - because when two foods are tasty, they are tasty together right?!
