Sweet Potato & Peanut Butter soup
Ingredients
1 Large Onion (chopped)
3 Cloves Garlic (chopped)
1 Red Pepper (chopped)
2 Large leeks (trimmed)
1 Large Sweet Potato (cubed)
2 tbsps. Natural Peanut Butter
2-3 tbsps Vegan Bouillon
Recipe
Fry the onion, garlic and leeks in a large pot until soft.
Add the sweet potato & red pepper and fry for a further 3-4 minutes.
Add the vegan/vegetable bouillon and enough water to cover all the vegetables in the pot.
Bring to the boil, then reduce the heat and simmer for 15 minutes.
Stir in the peanut butter and simmer for a further 5 minutes.
Blend and serve
