Winter Warming - Slow Cooker Vegan Stew

Ingredients: Bear in mind this makes at least 6 bowls ๐Ÿ˜‹

๐Ÿ˜ต 2 Cloves garlic
๐Ÿฅ— 1 large onion
๐ŸŒถ 1 Red pepper
๐Ÿ  2 Medium Sweet potato
๐Ÿ  2 Medium potato
๐Ÿฅ• 2 Medium carrot
๐Ÿฅ• 1 Medium parsnip
๐ŸŒฝ Small tin of sweetcorn
๐Ÿ… 1 tin chopped tomatoes
๐Ÿ˜Š 150g red lentils uncooked
๐Ÿต 4-5 cups vegan stock/bouillon
๐Ÿ‡ฎ๐Ÿ‡ณ 1 tbsp curry powder
๐Ÿถ 1 tsp cumin
๐ŸŒฟ 1 tsp mixed herbs
๐Ÿถ Salt & pepper

๐Ÿ™‹๐Ÿผโ€โ™‚๏ธSet Slow Cooker to high.

๐Ÿด Chop all the veg depending on how thick you would like the stew & start by adding onions, garlic, red peppers, sweetcorn, lentils, chopped tomatoes & any herbs & spices to the slow cooker.

Add half of the vegan stock/ bouillon & stir all the ingredients for a short while.

๐Ÿ  Now add the potatoes, carrots, parsnips & remaining stock & stir ensuring the stock covers the contents comfortably!

Leave on high heat for 2-3 hours or reduce to low heat & allow to cook for 5-6 hours (always check manufactures cooking guidelines)
