Ginger & coconut energy balls, ready in 5 mins

These tasty treats are a great mid afternoon energy boost or as an alternative to your favourite lunchtime chocolate bar. Whats better is they are relatively cheap to make, only contain 5 ingredients & will be ready in a matter of seconds.

 

I will advise caution when enjoying these though as they are bloody delicious & it's easy to get carried away. 😋😋😩

 

Ingredients;

  • 200g pitted dates
  • 200g cashew nuts
  • 50 g desiccated coconut
  • 2 tbsp of ground ginger
  • 2 tbsp of coconut oil

 

How to make;

 

  1. Pop 200g of cashews in a food processor & blitz for 20-30 seconds.
  2. Add rest of ingredients & continue to blitz for another 2- 3 minutes or until desired consistency.
  3. Roll into small bite size balls & pop in the fridge or eat right away.
