Salted Caramel & Cashew Balls

Perfect as a treat at any time but its probably best you enjoy sparingly! Deep down we all know there is no such thing as #guiltfree 😟

To make:

  1. For the caramel - blend 1 1/2 cup of pitted dates, 2 tablespoons of coconut oil & 2 tablespoons of water & a few pinches of rock salt or pink salt or whatever salt you have, until a thick salty caramel base is formed. (Add this mixture to a mixing bowl)
  2. Then blend 2 cups of raw cashews until desired consistency in food processor (I prefer a nutty texture so only blend for short period of time) & add to the mixing bowl.
  3. Add 1 cup of desiccated coconut & 1 tablespoon of a sweetener of your choice, I used agave but brown rice syrup or even peanut butter would also work great.
  4. Mix it all together with a fork or spoon & roll into small football shapes in your hand & pop in the fridge.
